- 2 large, ripe honeydew melons
- 3 oranges
- 3 grapefruits
- 1 cup orange juice
- 1 lime
- 2 mangos
- 6 mint leaves
- Peel and seed the melons and cut into pieces.
- Puree the melon and orange juice in a blender.
- Peel all citrus fruit and cut into small pieces removing the pith (white membrane).
- Chop mint and add to citrus fruits.
- Place citrus relish in middle of shallow bowl and pour melon soup around.
Serves 4
