Honeydew Melon Soup with Citrus Fruit Relish and Fresh Mint

Ingredients
  • 2 large, ripe honeydew melons
  • 3 oranges
  • 3 grapefruits
  • 1 cup orange juice
  • 1 lime
  • 2 mangos
  • 6 mint leaves
Directions
  1. Peel and seed the melons and cut into pieces.
  2. Puree the melon and orange juice in a blender.
  3. Peel all citrus fruit and cut into small pieces removing the pith (white membrane).
  4. Chop mint and add to citrus fruits.
  5. Place citrus relish in middle of shallow bowl and pour melon soup around.
