Mango Vinaigrette (emulsify)

Yield: 1 quart

Ingredients
  • 1 cup + 2 ounces Mango Puree, fresh
  • ¾ cup Rice Vinegar
  • ½ cup Vegetable Oil
  • 3 tablespoons Ginger, fresh
  • To Taste Kosher Salt
  • To Taste Fresh Ground Black Pepper
  • 2 tablespoons Orange Juice
Method
  1. In a blender or food processor, add the mango puree, vinegar, ginger and orange juice.
  2. With the blender on slow, add the oil to create an emulsification.
  3. Add salt and pepper.
  4. Check the flavors and adjust if necessary.
