Make-your-own Curry (or use curry powder)
4 Tbs ghee or butter
1/2 tsp mustard seed
1/2 tsp cumin seed or ground cumin
1/2 tsp ground cloves
3/4 tsp ground cinnamon
1 tsp salt
1 tsp tumeric
1 tsp ground coriander
2 T sugar
1/2 tsp cayenne
1 can cocnut milk (I used lite)
Boil 3 large baking potatoes, cut into cubes.
While the potatoes are boilding, melt the butter, add spices (or curry powder) and saute till the mustard "dances". Then add the coconut milk. This is the base for the soup.
Pour this into a larger pot. When the potatoes are cooked, puree them in a blender or food processor with some of the boiling water and some milk to make a soft mash. Add this to the soup base. Also add:
1/2 cup water with 3 cubes of vegetable boullion dissolved in it.
Saute:
1 small onion, diced
1 carrot, sliced
1 cup frozen peas
any other vegetables you might like
Add the saute to the soup. Simmer until it's as thick as you like. It's good.
