Rub on Kikkoman Soy Sauce.
Sprinkle some pepper, onion powder, garlic powder, (and a little cajun seasoning)
Place on BROILER PAN, with some (1/4 - 1/2 can) beer or water in the bottom. Use the rack for the meet, and TENT the entire set-up with foil - loosly -- you want it to steam, but not boil.
I usually begin with oven about 350 for 1/2 hr. then lower oven to 275* - 300* depending how much time I have. Can bake 6 hrs. easily at 275*, lower to 250 if going longer. And, keep around 300 if needed earlier.
Check water/beer level and add more in a few hours if needed.
We seem to get more tender brisket from the oven since we let it cook longer than when we try to grill it.
***on the side, warm and add favorite BBQ sauce if desired at the end, or when serving.
