4 medium red potatoes – grated raw
pinch salt
2 cups flour
Mix above ingredients together
4 qts. Salted water – BOILING
Drop 1 teaspoon potato in water while boiling
cook 20 minutes.
DRAIN
Butter shallow casserole. Alternate layer of melted butter, parmesan cheese, gnocci (use clarified butter, (brown butter in frying pan before using)
