Homemade Marshmallows

Ingredients
3 pagkages unflavored gelatin
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon kosher salt
1 tablespoon vanilla extract
confectioners sugar for dusting

Directions
Combine gelatin and 1/2 cup of cold water in the bowl of the mixer and set aside

Combine sugar, corn syrup, salt, 1/2 cup water in a small saucepan and cook over medium heat until sugar dissolves. Raise the heat until high and cook until the syrup is 240 degrees (use a candy thermometer). Remove from heat.

Put mixer on low speed and slowly pour sugar syrup into dissolved gelatin. Put the mixer on high speed and whip until mixture is very thick, about 15 minutes. Add vanilla and stir until completely incorporated.

Dust an 8 x 12 in non-metal baking dish with confectioners sugar through a sieve. (This works A LOT better if you spray the dish with PAM first.) Pour marshmallow mixture into pan, smooth and dust with more confectioners sugar. Allow to stand overnight to dry, then invert and cut. (a pizza cutter works well)
