Egg Substitute & Names

For 1 egg, use one of the following in recipes:
  • 1 tsp. baking powder, 1 Tbl water, 1 tsp. vinegar
  • 1 tsp. yeast dissolved in 1/4 cup warm water
  • 1 tsp. apricot puree
  • 1 1/2 tsp. water, 1 1/2 tsp. oil, 1 tsp. baking powder
  • 1 packet gelatin, 2 tsp. warm water (only mix when READY to use)
I also read about the ground flax seed, but need to look up proportions (think these were all from your "vegetarian" magazine, so you could check on-line if you have questions.)

Eggs can be listed as:
  • Albumin
  • "ovo" - prefix
  • Globulin
  • Apovitellenin
  • Levitin
  • Ovalbumin
  • Ovomucin
  • Ovumucoid
  • Ovovitellin
  • Phosvitin
  • lysozyme (Europe)
  • Simplesse -(fat substitute made from egg or milk protein)
**also do not take a flu shot**
