Cream Cheese Pastry Dough

Kristin's pie crust recipe.

Makes 1 double crust 9 inch pie

Ingredients:
  • 1 ½ sticks (3/4 cup) unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 tablespoons sugar
  • ½ teaspoon vanilla
  • 2 ¼ cups all purpose flour
  1. Beat together butter, cream cheese, sugar, vanilla, and a pinch of salt in a large bowl with an electric mixer at medium-high speed until pale and fluffy, 1 to 2 minutes. Reduce speed to low, then add flour and mix until just combined.
  2. Turn out dough onto a lightly floured surface and form into 2 balls. 1 slightly larger than the other, then flatten each into a 5 to 6 inch disk. Wrap disks separately in plastic wrap and chill until firm, at least 1 hour.

Dough can be chilled up to 1 day.
