Mostaccioli - Aunt Florence
- 1 lb. Mostaccioli noodles (Penne Pasta if can't find Mostaccioli)
- 1 large onion
- 1 green pepper
- 1 Cup celery - chopped
- 1 large can tomatoes
- 10 dry mushrooms (softened,sliced)
- 1/2 lb. yellow cheese (Longhorn)
- 1 1/2 lb. ground beef
- salt & pepper
Cook Mostaccioli in boiling salt water until tender.
Chop fine: onion, celery, green pepper, and brown in small amout of oil; add tomatoes and mushrooms and simmer while waiting for Mostaccioli to cook. Brown meat. Drain Mostaccioli, put all together, add half the cheese which as been cut up in small pieces or grated. Put in casserole and sprinkle rest of cheese on top. Bake in oven until cheese is melted and brown (about 1 hr.). This amount will serve six.

Linda's Christmas Mostaccioli (the one I always make)
- 3 lbs. hamburger
- 2 Tbl. shortening
- 1 large onion - chopped
- 2 garlic pods (or garlic powder)
- 1 teaspoon chili powder
- 2 teaspoons vinegar
- 1 teaspoon dry oregano
- 3 cans tomato puree
- mushrooms for top (opt.)
Brown meat in shortening, (drain if fatty),then add onion, garlic, salt, pepper, add 3 cups water and bring to a boil, then simmer 1/2 hr. Add tomato puree and chili powder, vinegar, oregano and simmer 1/2 hr. Add water (or wine) if dry.
Cook noodles - Mostaccioli - (about 1/3 of the box) and add to the meat mixture. Stir together and serve.

Janice Guarnieri's Baked Mostacolli/Lasagna Recipe {-- QUICK Version --}

Ingredients:
- 3- jars spaghetti sauce
- 1-lb hamburger-meat
- 1-lb mostacolli noodles
- 3- 8oz pkg mozzarella cheese
- 1- Large Rectangular Foil Pan
Middle: Mix Together (in a medium bowl) all ingredients below
together for cheese layers..
- 2-cups- cottage cheese
- 2-cups- mozzarella cheese
- salt (dash)
- pepper (ground) few shakes
- parsley flakes (few shakes)
- 2- eggs
Instructions;
Brown hamburger-meat in skillet,
and boil noodles.
Add sauce to meat.
Add noodles to meat/sauce mixture.
Cover bottom of Large Rectangular Foil
Pan with sauce/noodle mixture.
Spoon cheese layer on next.
Layer sauce/noodle mixture again.
Sprinkle all remaining mozzarella
cheese on top of lasagna. Bake at
350 degrees in oven, for about 45
minutes or until brown.
*** Cheese mixture can be varied for
adding more of one cheese or another.

BAKED MOSTACCIOLI {-- QUICK Version --}
- 1 1/2 lbs. hamburger
- 1 jar Heinz brown gravy
- 1 lg. & 1 sm. jar Prego sauce
- 2 onions, chopped
- 2 green peppers, chopped
- 1 pkg. (2 c.) shredded cheddar cheese
- 1 pkg. (2 c.) shredded Mozzarella cheese
- 1 lb. mostaccioli
Saute hamburger, onions and green peppers. Add brown gravy and Prego sauce. Let simmer for 30 minutes. Cook pasta according to directions. Mix cheeses together in bowl. Layer pasta and other ingredients together. Example: Cover 13"x9" pan with a little sauce, add pasta, sauce and cheese and repeat. Top with remaining cheese and bake 30 minutes at 350 degrees.

MOSTACCIOLI AND SAUSAGE BAKE {-- QUICK Version --}
- 1 lb. Italian sausage, cut in 1/4" diagonal slices
- 1 (15 oz.) jar spaghetti sauce
- 6 oz. mostaccioli noodles, cooked & drained
- 1/3 c. (10 1/2 oz.) Kraft 100% grated Parmesan cheese
- 1 (4 oz.) pkg. 100% mozzarella cheese
Brown sausage; drain. Add sauce, noodles and Parmesan cheese; mix well. Microwave on high 7-8 minutes or until heated through. Stir after 4 minutes. Top with mozzarella cheese. Microwave 2 minutes.
Conventional: Top with cheese (mozzarella) before baking. Bake at 350 degrees for 25 minutes or until heated through.

BAKE MOSTACCIOLI {-- QUICK Version --}
- 1 lg. jar Ragu sauce with meat
- 1 lb. mostaccioli noodles, cooked
- 1 lb. small curd cottage cheese
- 1 lb. mozzarella (grated)
- 1/2 c. grated Romano cheese
- 2 eggs
- 1/4 c. dry bread crumbs
Mix all ingredients except sauce and 1/2 lb. mozzarella.
In 9x13 inch pan put about 1/2 cup of 3/4 cup sauce on bottom of pan. Spoon in pasta and cheese mixture. Spread more sauce on top just to cover. top with remaining mozzarella. Bake at 375 degrees for 30 to 40 minutes until bubbly and browned. Let stand 15 minutes before cutting in to portions. Heat remaining sauce and serve with mostaccioli.

BAKED MOSTACCIOLI {-- LONG Version --}
- 8 oz. mostaccioli
- 1 1/2 lbs. ground beef
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1 clove garlic, minced
- 1 (28 oz.) can tomatoes, cut up
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 1 (4 oz.) can mushroom stems and pieces
- 1/2 c. water
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. dried basil, crushed
- 1/8 tsp. pepper
- 1 lg. bay leaf
- 6 oz. sliced Mozzarella cheese
- 1/2 c. grated Parmesan cheese
Cook mostaccioli in a large amount of boiling salted water about 14 minutes or just until tender; drain. Set aside.
Meanwhile, in large saucepan cook ground beef, onion, green pepper and garlic until meat is browned and vegetables are tender. Drain off fat. Stir in undrained tomatoes, tomato sauce, tomato paste, undrained mushrooms, water, salt, sugar, basil, pepper and bay leaf. Bring to a boil; reduce heat. Cover; simmer for 30 minutes, stirring occasionally. Remove bay leaf. Stir in mostaccioli.
Turn half of the meat mixture into 3 quart casserole or 13x9x2 inch baking dish. Layer half of the Mozzarella cheese atop. Top with remaining meat mixture. Sprinkle with Parmesan cheese. Cover with foil. Bake in 350 degree oven about 35 minutes or until heated through. Remove foil. Cut remaining Mozzarella cheese into strips; arrange atop casserole. Bake about 5 minutes more. Let stand 5 minutes before serving. Makes 8 to 10 servings.

- 8 oz. Mostaccioli (16)
- 1 lb. hamburger (2)
- 1/2 lb. Italian sausage (1)
- 1/4 c. chopped onion (1/2)
- 1/4 c. green peppers, chopped (optional)
- 1 clove garlic, minced (2)
- 1 (28 oz.) can tomatoes, pureed (2)
- 1 (8 oz.) tomato sauce (2)
- 1 (6 oz.) tomato paste (2)
- 1 tsp. salt (1 tsp. enough)
- 1 tsp. sugar (2 tsp.) or use white soda
- 1 tsp. basil (2 tsp.)
- 1/8 tsp. pepper (1/4 tsp.)
- 1 lg. bay leaf (2)
- 1/2 c. Parmesan (1 c.)
- 1 (6 oz.) pkg. Mozzarella (12 oz.)
Cook pasta in boiling salted water until almost tender. Drain. Cook beef, pork, onion, green pepper and garlic until browned. Drain. Add tomatoes, sauce and paste and seasonings. Add 2 cups water, cover and simmer 30 minutes. Stir in Mostaccioli and put in 9x13x2 inch pan.
Sprinkle with Parmesan cheese. Cover with foil and bake at 350 degrees for 35 minutes. Place Mozzarella cheese (in serving size pieces) on top and bake 5 minutes more.
