Eggplant Patties

1/2 or 1 large eggplant - cut into 1" pieces - keep skin on
steam for 10 minutes - no salt
drain dry

add:
salt/pepper
fresh basil chopped
1 cup parmesan or pecorino grated
1 cup italian bread crumbs
1 egg beaten
mix and shape into patties
panfry until golden dark

they made smaller patties but could be burger size
